Challenge!

We thought it’d be fun to post occasional xgfx culinary challenges on Friday and today I’ve decided to post our first one.  Only problem is I can’t decide what the challenge should be!  I’ve been Weeble Wobbling for days, thinking about creations I’ve seen online or in books that I want to make and eat.

First , I was thinking:  Cookie Stuffed Cookies!

But I’m not really feeling the cookie love right now. I mean that is a LOT of cookie.

Then my thoughts went flying to gluten-free puff pastry.  I would LOVE to veganize some of this stuff, then make danishes!!!  But the thing is, I really don’t want to eat fatty pastries right now, I want to eat strawberries!  And sugar-snap peas.   And grain bowls  topped with veggies coated in this delicious Korean BBQ sauce, my friend Julie hooked me on.

Then, the other day, I was perusing Go Raw on a Budget, the wonderful blog of one of our readers.  I find her recipes especially inspiring.

Her Banana Brittle got me in a particular twist, so I was thinking a dehydrator challenge!  But that just doesn’t seem right, since I would guess most folks don’t own dehydrators, and drying things in the oven is sorta energy deficient, especially now that Spring is in my backyard and things are warming up.

So finally, I’ve decided upon something simpler, but still a major kitchen challenge (at least for me, since I have not yet bonded with a pizza dough I can sing about).  My challenge to anyone who dares to cook with me this week is Scratch Pizza!

It can be raw, cooked, topped with anything you want, but the dough and toppings have to be xgfx and made from scratch, with no mixes.

If you want to participate, simply blog about your pizza with a photo and recipe by next Thursday!  Comment here when your post is up, so I can include it in my roundup, and if no-one joins me, at least come Friday next week I’ll have hopefully made some progress towards finding a pizza that I can enjoy and make myself without help from Mr. Bob R. M.

    I would have loved to join you, but I’m away next week :(
    I hope I can at least see some fine vegan pizzas :) and maybe I can join in for the next challenge. Good luck with your pizza!

    I love this idea! Ironically, I am also out of town this week – I hope you plan on making this a fairly regular thing, though, because I definitely want to try it in the future!

    OOH! looks like fun– I need to perfect my pizza dough anyway! Although I’m not sure if I can participate this week since we are going out of town on Wednesday and have preparations up until then :(.
